Quinoa & Black Beans Salad

Ingredients for 1 bowl:

Dressing:
  • 1 tbsp of mustard
  •  lemon as needed 
  • salt & pepper as needed

Instructions:

  • Soak the beans overnight then cook them until soft.
  • Cook the quinoa according to package instructions.
  • Let the quinoa and beans cool then transfer them to a large salad bowl.
  • Add corn then prepare the dressing mixing mustard, lemon and seasoning them with salt & pepper.
  • Drizzle the salad with the dressing and mix well.
