Ingredients for 1 bowl:
- 1/2 cup of cooked quinoa
- 1/4 cup of black beans cooked
- 4 tbsp of corn
- 1 tbsp of mustard
- lemon as needed
- salt & pepper as needed
Instructions:
- Soak the beans overnight then cook them until soft.
- Cook the quinoa according to package instructions.
- Let the quinoa and beans cool then transfer them to a large salad bowl.
- Add corn then prepare the dressing mixing mustard, lemon and seasoning them with salt & pepper.
- Drizzle the salad with the dressing and mix well.
