Chicken Quinoa Bowl

Ingredients:

  • 1 cup cooked brown rice
  • 1 cup cooked quinoa
  • 500g chicken breast
  • 1 can Chickpeas
  • Avocado
  • Sesame seeds
  • Spinach leaves

Instructions:

  • Cook quinoa and rice to package instructions and mix together
  • Pat dry your drained chickpeas and add oil, salt and your preferred spices
  • Roast in a 200°C oven for about 30 mins
  • Pan fry the chicken in oil with your favorite spices
  • Put your quinoa and rice mix in a bowl and top with the chicken, chickpeas, spinach and avocado
  • Sprinkle sesame seeds on your avocado for garnish
