Mixed Tomato Tart

Ingredients:

Pate brisee:
  • 1 cup of Naturalia flour
  • 1 egg yolk
  • 1/2 cup of Elle & Vire butter
  • 30 cl of water
  • salt
Filling:
  • 1 cup of mini heirloom tomatoes
  • 1/4 cup of cherry tomatoes
  • 1/4 cup of Taanayel shredded mozzarella 
  • 3 tbsp of extra-virgin olive oil
  • 1/2 tbsp of  Gardenia dried oregano
  • basil leaves to garnish
  • salt and pepper

 

Instructions:

  • Start by cutting the butter into small pieces.
  • Add the flour and start incorporating the butter into it.
  • Add the egg yolk and the water gradually and knead with your hands until you form a dough.
  • Refrigerate for 2 hours.
  • Roll the dough into a quiche pan, pierce it with a fork.
  • Brush the pierced dough with olive oil, then add oregano, mozzarella cheese, previously halved tomatoes.
  • Bake on 180C for 20 minutes.
  • Garnish with basil.
