VEGAN EXOTIC FUSION PUDDING

This pudding is vegan, keto, dairy free, gluten free and sugar free.

Number of Servings: 4

Ingredients:

1st Layer :

  • 2 Cups Organic Coconut Cream
  • 2 Tablespoons Raw Cocoa Powder
  • 3 to 5 drops Sweetener of Choice (Liquid Stevia, Monk Fruit, Maple, Agave, etc…)
  • 1 Teaspoon Agar Agar Powder or Organic Gluten-Free Corn Starch

2nd Layer - Middle Layer :

  • 4 Scoops Organic Crunchy Peanut Butter
  • 3rd Layer :
  • 2 Cups Organic Coconut Cream
  • 2 Tablespoons Organic Crunchy Peanut Butter
  • 3 to 5 drops Sweetener of Choice (Liquid Stevia, Monk Fruit, Maple, Agave, etc…)
  • 1 Teaspoon Agar Agar Powder or Organic Gluten-Free Corn Starch

Toppings / Decorating : Organic Unsweetened Coconut Shreds or Flakes Organic Salted Peanuts Vegan Dark Chocolate Shreds

Instructions:

  • Combine all ingredients of the 1st layer in medium saucepan and bring to a boil over medium heat whisking continuously until thickened ( 4-5 minutes ).
  • Divide the obtained pudding on 4 serving cups or jars. Allow the pudding to cool a little bit in the fridge or freezer while you prepare the 3rd Layer.
  • Repeat for 3rd Layer : Combine all ingredients of the 3rd layer in medium saucepan and bring to a boil over medium heat whisking continuously until thickened ( 4-5 minutes ).
  • Retrieve the chilling serving cups and put 1 scoop of organic crunchy peanut butter in each cup then cover it with the 3rd layer pudding. Let chill in the fridge for at least 2 hours.
  • Sprinkle the toppings as follows : Organic Salted Peanuts Covered with Organic Unsweetened Coconut Shreds or Flakes Topped up with Vegan Dark Chocolate shreds.
  • Serve chilled / cold
