Wholewheat Chocolate Chip Cookies

Number of Servings: 20

Ingredients:

  • 2 cups wholewheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (unsweetened)
  • 2 Tbsp cacao nibs (optional)
  • 3/4 cup sugar (I used Coconut sugar)
  • 2 Tbsp maple syrup (optional)
  • 1/2 cup melted coconut oil
  • 2 Tbsp water
  • 1 egg
  • 1 tsp vanilla extract

Instructions:

  • In a medium bowl, combine the flour, baking soda and salt.
  • Whisk to combine, then add the chocolate chips and toss to coat
  • In another bowl, combine the egg, vanilla, sugar, oil and water
  • Whisk until the mixture is smooth
  • Add the flour mixture to the wet mixture, then stir just until combined and no more flour is visible (don’t overdo it)
  • Form your cookies (the size you wish) and place them on a parchment paper on the baking pan; keep some space between them
  • Freeze your cookies on the pan for 30 minutes
  • Once ready, bake your cookies in preheated oven for 15-17 minutes on 180•C.
