Ingredients:
Step 1 Ingredients:

  • 1 cup warm milk
  • 1 cup warm water
  • 1\2 cup oil
  • 2 egg whites
  • 1 tbsp white vinegar
  • 1 tbsp sugar
  • 2 tbsp dry yeast
  • 1 tsp pure vanilla extract

Step 2 Ingredients:

  • 5 cups all purpose flour
  • 1 tsp salt
  • 1 tbsp baking powder
Step 4 Ingredients:
  • 1 cup cheese preferable accawi
  • 1 mozzarella cheese
  • 14 small slices قشقوان cheese
  • 1 tbsp dry thyme
  • 1 tbsp nigella seeds

Step 7 Ingredients

  • 2 egg yolks
  • 1/2 tsp white vinegar
  • 1/2 tsp water
  • 1 tbsp Sesame seeds
  • 1 tbsp nigella seeds

Instructions:

  • Step 1: Mix all the ingredients in step 1 and leave aside for 5 minutes.
  • Step 2: In the bowl of your stand mixer sift all the dry ingredients of step 2 (flour, salt and baking powder), then add the wet ingredients to the dry ingredients. Using the Hook attachment start kneading the dough slowly at first until the dough forms, then on medium speed knead for 5 minutes until the dough is soft and smooth. Add the dough to a greased bowl with oil, cover the dough with some oil as well so it won't dry cover the bowl with a plastic wrap and leave to proof in a warm place for 1 hour.
  • Step 3: After 1 hour the dough will double in size. Remove from the bowl, and place on a floured surface. divide the rough into 14 equal bowls (try using a kitchen scale for more accuracy and similar portions). cover the bowl with a kitchen towel and leave aside for 5 minutes.
  • Step 4: Mix all the ingredients of step 4 except the قشقوان cheese and leave aside.
  • Step 5: Preheat oven to 200˚C. Line 1 baking pan with parchment paper and lightly greased under. Take each dough bowl, roll and shape it into a rectangle. Place the filling inside, add the قشقوان cheese on top of the filling, start rolling the dough until u have a cylinder making sure to close to pinch the sides inwards to seal very well. Step 6: Place all the rolled cylinders into a baking pan, cover with a kitchen towel and leave to rest for 15 minutes.
  • Step 6: After 15 minutes, remove the kitchen towel, brush all the dough cylinders with the egg wash (ingredients mentioned in step 7), sprinkle on top some sesame seeds and nigella seeds. Place the baking pan into the oven until golden on top (20-25 minutes in total)
