Poached eggs and avocado Toast

  • 4 fresh eggs
  • 4 tablespoons vinegar
  • 4 pieces of toast bread
  • 2 avocados
  • 4 pieces of salmon
  • a handful of greens
  • salt and pepper
  • Balsamic


  • Bring a medium non-stick saucepan full of water.
  • Add 2 tablespoons of vinegar and boil under a lid
  • Break eggs carefully in a bowl
  • Remove from heat and immediately add eggs gently. Make sure the edge of the bowl touches the hot water Cover the lid for 3-4 mins While they are poaching, toast the bread.
  • Smash avocado and season to taste with salt and pepper.
  • Using a slotted spoon remove poached eggs to a paper towel to drain
  • Top toast with avocado, a piece of salmon a handful of greens, poached egg and a pinch more of salt and pepper. Add a little of balsamic
