Ingredients:
For the dressing, combine:

  • 1/2 Tbsp olive oil 
  • 1 tsp black pepper 
  • 1 tsp paprika
  • 1 Tbsp mustard
  • 1 tsp himalayan salt
  • 1 Tbsp lemon juice
  • 1 Tbsp vegan mayo 

For the base, combine:

  • 1cup lettuce to for hydration and crunchiness
  • 1/2 cup multigrain pasta for fullness  
  • 1/2 cup corn for fiber and vit B6
  • 1/2 cup red kidney beans for protein 
  • 1/2 cup shredded carrot for beta-carotene
  • 1/4 cup shredded vegan parmesan for vit B12
  • 1 Tbsp sunflower seeds for vit E and magnesium
  • 1 Tbsp pumpkin seeds for iron and omega-3
  • Add the dressing

 

Instructions:

  • Combine all the ingredients and top with the dressing.
