Ingredients:
For the dressing, combine:
- 1/2 Tbsp olive oil
- 1 tsp black pepper
- 1 tsp paprika
- 1 Tbsp mustard
- 1 tsp himalayan salt
- 1 Tbsp lemon juice
- 1 Tbsp vegan mayo
For the base, combine:
- 1cup lettuce to for hydration and crunchiness
- 1/2 cup multigrain pasta for fullness
- 1/2 cup corn for fiber and vit B6
- 1/2 cup red kidney beans for protein
- 1/2 cup shredded carrot for beta-carotene
- 1/4 cup shredded vegan parmesan for vit B12
- 1 Tbsp sunflower seeds for vit E and magnesium
- 1 Tbsp pumpkin seeds for iron and omega-3
- Add the dressing
