Dough Ingredients
- 2 cups almond flour
- 2 tbsp coconut flour
- 2 tbsp olive oil or melted coconut oil
- 2 tbsp Greek yogurt (or plant-based yogurt)
- 1 tbsp orange blossom water
- 1 tsp rose water
- ¼ tsp cardamom
- ¼ tsp baking soda
- Pinch of salt
- 1–3 tbsp unsweetened almond milk if needed
Pistachio Filling
- 1 cup finely ground Pistachios
- 1 tbsp honey or maple syrup (optional natural sweetness)
- 1 tsp orange blossom water
- ½ tsp rose water
- 1 tsp olive oil or coconut oil
- Optional: ½ tsp orange zest
Instructions
1) Make the dough

Mix almond flour, coconut flour, baking soda, salt, and cardamom.

Add olive oil, yogurt, orange blossom water, and rose water.

Mix until a soft dough forms.

Add almond milk gradually if the dough feels dry.

Let rest 10–15 minutes.
2) Prepare the pistachio filling

Mix ground pistachios, orange blossom water, rose water, and olive oil.

Add honey/maple syrup if using.

Form small 1 tsp balls.
3) Shape

Take about 1 tbsp dough and flatten it.

Place pistachio filling inside.

Seal and roll into a ball or oval.

Press with a fork or a maamoul mold.
4) Bake

Preheat oven to 170°C (340°F)

Bake 12–15 minutes until lightly golden

Let cool completely before serving.
