Feta Veggie Omelette

🍳Ingredients:

  • 🧀 80 g feta cheese block (keep whole)
  • 🍅 1/2 cup cherry tomatoes (halved)
  • 🫑 1/2 red bell pepper (sliced)
  • 🥒 1/2 small zucchini (sliced into half-moons)
  • 🧄 1 clove garlic (minced)
  • 🌿 1/2 tsp dried oregano (or Italian herbs)
  • 🫒 1 tsp butter
  • 🧂 Salt & pepper (to taste)
  • 🌱 Fresh basil or parsley for garnish

👩Instructions:

  • 🔥 Preheat oven to 200°C / 390°F.
  • 🥣 In a small baking dish, add veggies (tomatoes, bell pepper, zucchini) + garlic.
  •  🫒 Add butter,, sprinkle oregano, salt, and pepper. Toss to coat evenly.
  • 🧀 Place feta block in the center of the dish, surrounded by the veggies.
  • 🍽 Drizzle a tiny bit more olive oil over the feta.
  • ⏱ Bake for 20–25 minutes until veggies are tender and feta is slightly golden.
  • 🌱 Garnish with basil or parsley.
