Ingredients
- 4 Tbsp grated mozzarella
- 1 sliced avocado
- a handful of spinach
- 1/2 Tsp black pepper
- 2 eggs
- 1 Tsp fleur de sel with wild herbs
- 2 toasts
Directions
- Add 2 tbsp of vegan mozzarella cheese to each toast then microwave for 1 minute or till the cheese melts.
- Meanwhile, fry 2 eggs.
- To each toast add avocado slices followed by a fried egg, black pepper, salt then garnish with spinach leaves.
