Ingredients:
- 1200g of gluten free all-purpose flour
- 200 g of soft butter
- 550 g of pure bee honey
- 250g of brown cane sugar
- 2 tbsp of grape molasses
- 4 tsp mix of coriander, fennel seeds, cardamom, cinnamon, anise, nutmeg, clove, allspice
- 4 tsp of cocoa powder
- Ā½ tsp of fleur de sel
- 2 tbsp of baking powder
- 8 eggs
Instructions:
-Add butter, honey , sugar, molasses , spice , cocoa powder , salt to a pot over medium heat and stir to combine . Remove from heat until well combined.
-Stir flour and baking powder into a large mixing bowl . Add egg and butter-honey mixture and knead until a smooth dough forms.
-Let it rest for 6 hours.
-Preheat oven to 200 C . Roll out dough . Cut out the forms needed and transfer the cookies to a baking sheet. They should be 1 cm thick.
-Bake for 15 minutes.
