Ingredients:
- 400g of all-purpose flour
- ½ tsp of flaxseeds
- 425g of cane sugar
- 5 tbsp of water(divided)
- 1 tsp of baking soda
- 225 g of molasses
- 125 g of vegan margarine
- 2 tsp of gingerbread spice mix(coriander, fennel seeds, cardamom, cinnamon, anise, nutmeg, clove, allspice mix)
Instructions:
-Blend the flaxseeds using an electric mixer then mix them with 1 tbsp of the water in a small bowl, set aside.
-Add flour, 125 g of sugar, spices, baking soda, flaxseed mix, margarine and molasses to a standing mixer. Knead until a smooth dough forms.
-Wrap dough in a plastic wrap then transfer to rest in the fridge for 1 hour.
-Preheat the oven to 180 ˚֯֯C.
-Dust the work surface with flour then roll the dough to an oval shape.
-Cut out shapes needed (2 houses, 4 rectangular shapes,2 gingerbread man and 2 trees.)
-Transfer the cookies to a baking sheet and bake for 10 minutes.
-Meanwhile, mix 200g of sugar with 2 tbsp of water to form a thick icing . Decorate each cookie and set aside to dry.
-In a small saucepan, melt 100g sugar and 2 tbsp of water and cook over medium heat until caramel forms.
-Dip bottom of the cookies in caramel so they can stick to each other and form the house.
