Healthy Yogurt & Strawberry Mother's Day Cake

Ingredients

Cake

- 1½ cups oat flour (blend Oats into flour)
- ½ cup whole wheat flour
- 3 eggs
- ¾ cup plain Greek yogurt
- ¼ cup olive oil or melted coconut oil
- 2–3 tbsp honey or maple syrup (optional, for mild sweetness)
- 1 tsp vanilla extract
- 1½ tsp baking powder
- Pinch of salt
- Zest of 1 Lemon
-¾ cup chopped Strawberries

 Healthy Strawberry Yogurt Frosting

- 1 cup Greek yogurt
- 3–4 tbsp blended Strawberries
- ½ tsp vanilla
- Optional: 1 tsp honey if needed


Instructions

1) Prepare batter

  1. Preheat oven to 175°C (350°F).

  2. Whisk eggs, yogurt, olive oil, honey (if using), and vanilla.

  3. Add oat flour, whole wheat flour, baking powder, salt, and lemon zest.

  4. Mix until smooth.

  5. Fold in chopped strawberries.

2) Bake

  • Pour into a lined 20 cm cake pan.

  • Bake 30–35 minutes until a toothpick comes out clean.

  • Let the cake cool completely.

3) Make frosting

  1. Mix Greek yogurt with blended strawberries and vanilla.

  2. Refrigerate 15–20 minutes so it thickens.

4) Decorate

  • Spread strawberry yogurt frosting over the cake.

  • Top with fresh strawberries and optional chopped pistachios.
