Ingredients:
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- 500g chicken breast
- 1 can Chickpeas
- Avocado
- Sesame seeds
- Spinach leaves
Instructions:
- Cook quinoa and rice to package instructions and mix together
- Pat dry your drained chickpeas and add oil, salt and your preferred spices
- Roast in a 200°C oven for about 30 mins
- Pan fry the chicken in oil with your favorite spices
- Put your quinoa and rice mix in a bowl and top with the chicken, chickpeas, spinach and avocado
- Sprinkle sesame seeds on your avocado for garnish
