Ingredients:
- 1Bunch of kale
- 1 chicken breast
- 1/2 cup cooked quinoa
- Handful of flaxseeds
- 1/4 cup pf dried cranberries
- 1/4 cup of roasted almonds
- 1/4 cup extra virgin olive oil
- 1 Tbsp mustard
- 1 Tbsp honey
- 3 Tbsp balsamic vinegar
- Salt to taste
Instructions:
- Cut the kale and massage it for 2 minutes until it softens
- Cook the quinoa for around 15 minutes
- Grill the chicken breast for 10 min and season it with salt and pepper
- Mix the kale with the cooked quinoa
- Add the flaxseeds, cranberries and roasted almonds
- Add the grilled chicken pieces
- Mix the dressing and add it up
