PINE NUTS PESTO HUMMUS

Ingredients:

  • 1 1/4 cups cooked chickpeas
  • 1/4 cup toasted pine nuts
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 tablespoon vegan pesto
  • Juice of 1/2 a lemon
  • Generous pinch of salt
  • 4 - 6 tablespoons water
  • Garnishes: toasted pine nuts , pesto, fresh basil, cracked pepper

Instructions:

  • Simply add all the ingredients (minus the water) into a food processor. Process on high until smooth. With the processor running, add the water 1 tablespoon at a time until you've reached your desired consistency.
  • Transfer the hummus into a bowl and top with the garnishes.
  • Serve immediately with crackers, pita, toast, veggies, etc.
