Ingredients:
- 1 1/4 cups cooked chickpeas
- 1/4 cup toasted pine nuts
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 1 tablespoon vegan pesto
- Juice of 1/2 a lemon
- Generous pinch of salt
- 4 - 6 tablespoons water
- Garnishes: toasted pine nuts , pesto, fresh basil, cracked pepper
Instructions:
- Simply add all the ingredients (minus the water) into a food processor. Process on high until smooth. With the processor running, add the water 1 tablespoon at a time until you've reached your desired consistency.
- Transfer the hummus into a bowl and top with the garnishes.
- Serve immediately with crackers, pita, toast, veggies, etc.
