This Autumn Breakfast Parfait is a perfect blend of creamy Greek yogurt, roasted spiced apples, crunchy granola, and a sprinkle of cinnamon, a seasonal breakfast that’s as delicious as it is beautiful. It’s easy to make, packed with protein and fiber, and perfect for a cozy fall morning.

Ingredients (serves 2)

  • 1 cup Greek yogurt (plain or vanilla)
  • 1 medium apple, peeled, cored, and diced
  • 1 tsp coconut oil or butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1–2 tsp maple syrup (optional)
  • 1/2 cup granola (your choice, homemade or store-bought)
  • 2 tbsp chopped walnuts or pecans
  • 1 tsp pumpkin seeds (optional, for garnish)

Instructions

Roast the apples:

  • Heat coconut oil in a skillet over medium heat.
  • Add diced apples, cinnamon, nutmeg, and maple syrup.
  • Cook for 5–7 minutes, stirring occasionally, until tender and caramelized.
  • Remove from heat and let cool slightly.

Assemble the parfaits:

  • In a glass or jar, layer 1/4 cup Greek yogurt.
  • Add a layer of roasted apples.
  • Sprinkle a layer of granola and chopped nuts.
  • Repeat layers until the glass is full, finishing with a sprinkle of pumpkin seeds and a light dusting of cinnamon.

Serve & enjoy:

  • Serve immediately for crunchier granola, or refrigerate for up to 2 hours if prepping ahead.
