Ingredients:
- 2 tablespoons olive oil
- 1 onion, sliced thickly
- 2 portobello mushrooms, sliced thickly
- 1 package of tofu, sliced thickly
- 1 bunch kale, chopped into small pieces
Directions:
- Heat olive oil and sauté onions and mushrooms until soft.
- Add smoked tofu and cook 2 minutes.
- Right before serving, add chopped kale and cover, steaming for 2 minutes until bright green and wilted.
Variations:
Substitute different types of dark leafy greens and/or mushroom varieties.
Add freshly ground pepper and fresh or dried sage for flavor.
