Ingredients:
- 2 cups of oat flour
- 1 cup of brown cane sugar
- ¾ cup of chocolate nibs
- ½ cup of unsweetened cocoa powder
- 1 tsp of baking soda
- 1 egg
- 1 cup of greek yogurt
- ½ cup of almond drink
- a handful of Cashew nuts
- 1 tsp of vanilla
- ½ cup of vegetable oil
- Butter spray
Instructions:
- Preheat oven to 200֯C.
- Grease 12 muffin cups with butter spray.
- Combine flour, cane sugar, chocolate nibs, cocoa powder, and baking soda in a large bowl.
- Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill the muffin cups with mixture.
- Bake for 10 minutes, add cashew kernels on top each muffin then bake again for 10 minutes.
