Ingredients:
Roasted chicken
- 1 whole chicken
- 3 tbsp olive oil
- Handful of each: rosemary & thyme
- 1 lemon
- 4-5 big potatoes
- 3-4 big carrots
- 3 big onions
- 1 big garlic head (divided)
- Spices mix : 1 tsp of each salt, black pepper & white pepper, garlic powder , 1/4 tsp of each paprika and curry powder (optional)
- 1 tbsp starch
- 3 tbsp soy sauce
Lemon herb quinoa :
- 1 cup quinoa
- 1 clove garlic, minced
- 3 tbsp lemon juice & 1 tbsp lemon zest
- 1 tbsp olive oil
- Handful parsley
- Salt & black pepper to taste
- 1 big avocado
- handful of dried cranberries
- Handful of pistachios
Instructions:
-Cut the carrots & potatoes to big chunks, place them in the baking tray, drizzle some oil & season with s&p then place them on the borders of the tray.
-Cut each onion & the garlic head to 2 big pieces. Place them in the center of the tray. (Use 1 half of the garlic head & reserve the 2nd one)
-Take the chicken out of the fridge. Preheat your oven on 230 degrees.
-Clean the chicken & dry it outside & inside with some kitchen paper. Season it both in & out with 1 tsp of salt & 1/2 tsp black pepper.
-Stuff the cavity of the chicken with the thyme, rosemary, half garlic head & half lemon.
-Mix the chicken marinade ingredients (spices + olive oil). Then, using your hand, massage the outside of the chicken with the spices mixture. Tie the legs together with kitchen string
-Place the chicken in the previously prepared baking tray, on top of the onions & garlic. Roast the chicken & veggies for ~1h15mins or until cooked well (check by cutting the thigh )
-For the quinoa side dish: In a pot, add 1 tsp of oil & stir the quinoa for 2mins. Add water, close lid & let cook till the water dries. Transfer to a serving plate/bowl. Mix with the rest of the ingredients. Decorate with parsley & cranberries.
-Plate the chicken & vegetables (Except for the onion & garlic, BUT donβt throw them away) & let the chicken rest, covered, for 10-15mins .
-For the chicken sauce : Meanwhile, letβs prepare the sauce : In a sauce pan OFF-heat, add the roasted onions, garlic & 1 tbsp of starch. Mix well. Turn heat on for 1min. Add the water, black pepper, soy sauce & let everything simmer then blend the ingredients & run the mixture through a strainer to get a thick tasty sauce
