Ingredients for 2:
- ¼ cup broccoli
- small chopped onion
- 2 cherry tomatoes,
- 4 slices of red pepper
- 1 tbsp mozzarella
- 2 eggs
- ¼ cup skimmed milk
- salt & pepper as needed
Instructions:
- Whisk the eggs with milk and season with salt & pepper.
- Shop the broccoli, onion, tomatoes and red pepper.
- Mix all the ingredients and transfer to 2 ramekins.
- Bake for 10 minutes, add the mozzarella cheese and bake again until it melts.
