For the nuts brittle, combine:
- 1 cup chopped walnuts
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup maple syrup
- 2 tsp olive oil
- A pinch of salt
- Goat Labneh balls
- Pickled wild thyme
- Cherry tomato
- Olives
- Purslane
- Combine all the nuts and seeds with maple syrup and olive oil
- Spread on a pan lined with baking paper
- Bake for 35 min at 170 degrees C
- Allow to cool completely before removing from the pan
