Ingredients:
- 1 1/2 tsps Extra Virgin Olive Oil
- 2 stalks Green Onion (chopped)
- 2 Garlic (clove, minced)
- 14 ozs Tofu (crumbled)
- 1 tbsp Nutritional Yeast
- 1 tsp Turmeric
- 1/2 tsp Cumin
- Sea Salt & Black Pepper (to taste)
- 2 cups Lentils (cooked)
- 2 cups Baby Spinach (chopped)
Directions:
1. Heat the oil in a skillet over medium heat. Add the onion and garlic and sauté for one
minute.
2. Add the tofu, nutritional yeast, turmeric, and cumin to the skillet. Season with salt and
pepper. Cook for five minutes, stirring occasionally.
3. Add the lentils and spinach to the skillet. Cook for another three to four minutes or until
the spinach wilts. Enjoy!
