Ingredients:
- 1 cup of chopped pitted dates
- 1,5 cups of water
- 1.5 tsp of baking soda
- 0.5 cup of butter
- 0.5 cup of oil
- 0.5 cup of cane sugar
- 4 eggs
- 1 tsp of vanilla
- 2.5 cups of flour
- 2 tsp of baking powder
Instructions:
- Preheat your oven to 180C.
- Grease and flour a 12-cup Bundt cake pan.
- In a saucepan, mix the dates, water and baking soda.Bring the mixture to a boil. Set aside to cool.
- In a bowl, beat the eggs and sugar and add the oil and butter.
- Add the vanilla.
- Whisk the baking powder in the flour and add the egg mixture.
- Add cooked dates and mix well.
- Pour the cake batter into the prepared Bundt pan.
- Bake for 50 minutes to 1 hour or until a toothpick inserted into the cake comes out clean.
- Let cool slightly before serving.
