- 120ml Alpro Soya drink No Sugar
- 60ml plant-based butter
- 5mg salt
- 100g ground almonds
- 150g self-raising flour
- Pinch of baking soda
- 1 tbsp fresh herbs (chives work well, or use whatever you have to hand)
- 200g approx roasted vegetables – like butternut, carrot or parsnip
- 4 tbsp cranberry compote
- 100g mashed potato
Preparation:
- Start by heating your oven to 180°C and grease or line your muffin tin with paper cases. Put the Plant-based butter in a large bowl, pour in the Alpro Soya drink , stir in the salt and ground almonds.
- Sieve the self-raising flour and bicarb of soda and keep to one side. Finely chop the herbs and dice the leftover roasted veggies.
- Add all the dry ingredients, herbs, veggies and mashed potato to the wet ones in the bowl and mix together well. Add the cranberry compote, and using a wooden spoon, fold it gently into the batter. Season with a twist of salt and pepper.
- Spoon the mixture into your muffin tin – this recipe should make 12 yummy muffins. Bake for 20-30 minutes or until a toothpick comes out clean. Cool on a rack, then tuck in and enjoy all those Christmassy flavours all over again!
