Ingredients:
- 4-6 lamb shanks depending on size
- 1 can Massaman curry paste
- 2 cups coconut milk full fat
- 2 cups chicken stock
- Sliced onions
- Baby potatoes
- 1 cinnamon stick
Instructions:
- Mix the liquid ingredients with the curry paste and then add to pan
- Add the onions, potatoes, cinnamon stick
- Add the lamb shanks and turn them to make sure theyβre coated in the sauce
- Cover with foil and bake for 2 hours
- Remove foil and bake for another 1-1.5 hours depending on size of your shanks
- Flip the shanks every hour for even cooking and browning
- Skim the fat off the sauce before serving if you prefer and mix the sauce with a spoon before serving
- Garnish with sliced chilli and coriander and rice
