Lamb Shank Massaman Curry

  • 4-6 lamb shanks depending on size
  • 1 can Massaman curry paste
  • 2 cups coconut milk full fat
  • 2 cups chicken stock
  • Sliced onions
  • Baby potatoes
  • 1 cinnamon stick


  • Mix the liquid ingredients with the curry paste and then add to pan
  • Add the onions, potatoes, cinnamon stick
  • Add the lamb shanks and turn them to make sure they’re coated in the sauce
  • Cover with foil and bake for 2 hours
  • Remove foil and bake for another 1-1.5 hours depending on size of your shanks
  • Flip the shanks every hour for even cooking and browning
  • Skim the fat off the sauce before serving if you prefer and mix the sauce with a spoon before serving
  • Garnish with sliced chilli and coriander and rice
