Ingredients:
- 2 cups wholewheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips (unsweetened)
- 2 Tbsp cacao nibs (optional)
- 3/4 cup sugar (I used Coconut sugar)
- 2 Tbsp maple syrup (optional)
- 1/2 cup melted coconut oil
- 2 Tbsp water
- 1 egg
- 1 tsp vanilla extract
Instructions:
- In a medium bowl, combine the flour, baking soda and salt.
- Whisk to combine, then add the chocolate chips and toss to coat
- In another bowl, combine the egg, vanilla, sugar, oil and water
- Whisk until the mixture is smooth
- Add the flour mixture to the wet mixture, then stir just until combined and no more flour is visible (donβt overdo it)
- Form your cookies (the size you wish) and place them on a parchment paper on the baking pan; keep some space between them
- Freeze your cookies on the pan for 30 minutes
- Once ready, bake your cookies in preheated oven for 15-17 minutes on 180β’C.
