Turkish Eggs

You can make this dish for breakfast, or if you are not a morning person, for brunch!

Fresh, tasty and healthy perfect for summer

Ingredients:
  • 2 eggs
  • 25 mL olive oil
  • Cayenne pepper (you can add chili flakes if you’re a fan of spicy 🌶️)
  • Parsley
  • Pickled turnips
  • 2 garlic cloves
  • 125g Greek yogurt
  • Half a lemon
  • Salt

Instructions:

  • In a sauce pan, add your olive oil, cayenne pepper (and chili flakes, optional) and let it infuse on a low/medium heat
  • Do NOT boil your oil, if you burn your spices just start over
  • In a medium pot, boil water and white vinegar ( for poaching your eggs)
  • Crack your eggs (separately) and poach it into your liquid
  • You should cook your eggs for 2min30 for perfect poached eggs
  • Chop parsley and slice pickled turnips and set aside for garnish
  • Smash and chop your garlic
  • In a bowl, add your Greek yogurt, chopped garlic, half a lemon, salt and mix

You can start plating!

  • Start with the Greek yogurt mixture
  • Add the poached eggs and the garnish
  • Drizzle the infused oil on top

Enjoy with some grilled (or not) bread
