Fresh, tasty and healthy perfect for summer
Ingredients:
- 2 eggs
- 25 mL olive oil
- Cayenne pepper (you can add chili flakes if you’re a fan of spicy 🌶️)
- Parsley
- Pickled turnips
- 2 garlic cloves
- 125g Greek yogurt
- Half a lemon
- Salt
Instructions:
- In a sauce pan, add your olive oil, cayenne pepper (and chili flakes, optional) and let it infuse on a low/medium heat
- Do NOT boil your oil, if you burn your spices just start over
- In a medium pot, boil water and white vinegar ( for poaching your eggs)
- Crack your eggs (separately) and poach it into your liquid
- You should cook your eggs for 2min30 for perfect poached eggs
- Chop parsley and slice pickled turnips and set aside for garnish
- Smash and chop your garlic
- In a bowl, add your Greek yogurt, chopped garlic, half a lemon, salt and mix
You can start plating!
- Start with the Greek yogurt mixture
- Add the poached eggs and the garnish
- Drizzle the infused oil on top
Enjoy with some grilled (or not) bread
