Ingredients:
- 4 fresh eggs
- 4 tablespoons vinegar
- 4 pieces of toast bread
- 2 avocados
- 4 pieces of salmon
- a handful of greens
- salt and pepper
- Balsamic
Instructions:
- Bring a medium non-stick saucepan full of water.
- Add 2 tablespoons of vinegar and boil under a lid
- Break eggs carefully in a bowl
- Remove from heat and immediately add eggs gently. Make sure the edge of the bowl touches the hot water Cover the lid for 3-4 mins While they are poaching, toast the bread.
- Smash avocado and season to taste with salt and pepper.
- Using a slotted spoon remove poached eggs to a paper towel to drain
