Place the flour on a plate and season with some salt, do the same with the egg in a separate plate. Mix the panko and cornstarch and season with some salt in a third plate
Preheat your oven to 210C
Dip your zucchini in the flour, remove any excess, then dip it in the egg, and then the panko mix,
Then back in the egg mixture and then back into the panko mix to make sure its properly coated
Place on a baking try and spray some oil on it, and bake until golden brown and crunchy (flip them half way)
