Ingredients:
- 1/2 can of Ristoris mushrooms
- 2 tbsps of Elle & Vire butter
- 3 tsps of Kivinat tamari soy sauce
- 1 tsp lemon juice
- 300g of De Cecco penne
- 1/4 cup Elle & Vire cooking cream
- 1/2 cup shredded Parmesan
- 2 cups Kallo Chicken Stock (plus more while assembling)
- Handful of chopped coriander
Instructions:
- Strain the mushrooms (throw away the water) and place them on a hot pan and sauté, once theyre hot add the butter and soy sauce. In the meantime, cook your penne until its al dente (make sure your pasta water is properly salted)
- After 5 min of cooking your pasta, add 2 cups of the pasta water to the mushrooms and place it on high heat until it begins to boil and thicken (the water will reduce) then add the cream. Once pasta is al dente, add it to the sauce (dont throw away your pasta water). Add the cheese to the pasta and mix everything on high heat, and keep stirring. Add about 1/2 cup of pasta water and continue cooking your pasta with the sauce. Once done, Aadd your lemon juice and garnish with coriander
- Serve immediately while its still hot
