Mirin is used to sweeten and gives a depth in flavour. Free of sugar and preservatives unlike most commercial mirin. Mirin's mild sweetness balances soya sauce and is used to enhance sweet as well as savoury sauces, vinaigrettes, marinades and seafood dishes.
