Ingredients

  • 6 eggs
  • 1/3 Cup goat halloumi
  • 1 Tbsp extra virgin olive oil
  • 1 sliced onion
  • 1 sliced red pepper
  • 2 cloves of garlic
  • 1 Jar organic diced tomatoes 
  • 1 Tsp paprika
  • 1 Tsp coriander
  • Fresh cilantro for serving
  • Crispibread for serving

Directions:

-Preheat the oven to 190 C.

-Heat the olive oil in a skillet over medium heat then add the onion and pepper slices and cook for 15 minutes until they become soft.

-Pour the tomatoes, paprika, coriander, salt, pepper , bring to a boil then reduce the heat to low and simmer until the tomato sauce thickens. Stir in the halloumi cheese.

-Create 6 nests  in the mix and crack the eggs over them.

-Place the skillet in the oven to continue cooking until the eggs are set , about 12 minutes.

-Garnish the shakshuka with fresh cilantro and serve with crispibread.
