Ingredients for 3 servings
- 6 eggs
- 1/3 cup goat halloumi
- 1 Tbsp extra virgin olive oil
- 1 sliced onion
- 1 sliced red pepper
- 2 cloves of garlic
- 1 jar organic diced tomatoes
- 1 Tsp paprika
- 1 Tsp coriander
- Fresh cilantro for serving
- Crispibread for serving
Instructions
- Preheat the oven to 190 C.
- Heat the olive oil in a skillet over medium heat then add the onion and pepper slices and cook for 15 minutes until they become soft.
- Pour the tomatoes, paprika, coriander, salt, pepper , bring to a boil then reduce the heat to low and simmer until the tomato sauce thickens. Stir in the sliced halloumi cheese.
- Create 6 nests in the mix and crack the eggs over them.
- Place the skillet in the oven to continue cooking until the eggs are set , about 12 minutes.
- Garnish the shakshuka with fresh cilantro and serve with crispibread.
