Chocolate Muffins with Cashews

Ingredients:

2 cups of oat flour

1 cup of brown cane sugar

¾ cup of chocolate nibs

½ cup of cocoa powder

1 tsp of baking soda

1 egg

1 cup of greek yogurt

½ cup of hazelnut drink

a handful of Cashew nuts

1 tsp of vanilla

½ cup of vegetable oil

Butter spray

 

Instructions:

-Preheat oven to 200֯C.

-Grease 12 muffin cups with butter spray.

-Combine flour, cane sugar, chocolate nibs, cocoa powder, and baking soda in a large bowl.

-Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill the muffin cups with mixture.

-Bake for 10 minutes, add cashew kernels on top each muffin then bake again for 10 minutes.
