Ingredients:
- 3 eggs
- 250ml of almond cream
- 200ml almond milk
- 10ml rose syrup
- 1 tablespoon rose water
- 3 tablespoon of strawberry jam ( leave some for the decoration )
- 1 squeezed lemon
- Pinch of salt
- 1 packet of lemon cookies
- 50ml coconut oil
- 150g gluten free flour
Instructions:
Turn the oven at 180C . In a mixer, mix the cookies, coconut oil and 75g of flour until itβs a crumbly paste. Flatten it out and put it on the oven for 15/20min. Whisk together the cream, almond milk, eggs, rose water, syrup, jam, lemon - add at the end the flour. If you have a few little clumps they will disappear in the oven. Take out the crust, wait till it cools down a bit before adding the liquid mixture and Bake for 30 to 45 minutes.
Spread some jam, pistachios on top and voila !
