FRITTATAS WITH BROCCOLI

Ingredients for 2: 

  • ¼ cup broccoli
  • small chopped onion
  • 2 cherry tomatoes,
  • 4 slices of red pepper
  • 1 tbsp mozzarella
  • 2 eggs
  • ¼ cup skimmed milk
  • salt & pepper as needed

Instructions:

  • Whisk the eggs with milk and season with salt & pepper.
  • Shop the broccoli, onion, tomatoes and red pepper.
  • Mix all the ingredients and transfer to 2 ramekins.
  • Bake for 10 minutes, add the mozzarella cheese and bake again until it melts.
