Gluten Free Digestive Biscuits

Ingredients:

  • 300g oat flour
  • 100g coconut oil
  • 100g sugar 
  • 80 g dairy free milk
  • 2tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Instructions:

  • Preheat oven to 160c
  • Mix everything and knead by hand or use the processor (whatever is easier for you), until the dough comes together
  • Roll between two sheets of nylon or baking paper, to desired thickness cut out shapes
  • Reroll and shape until all the dough is used
  • Put on a sheet pan lined with baking paper and bake for about 1/2 an hr or until the bottom is golden
  • Take out of the oven and leave it to cool completely in the pan (don’t touch it)as it cools
