PLANT BASED CRANBERRY MUFFINS

Ingredients:

  • Start by heating your oven to 180°C and grease or line your muffin tin with paper cases. Put the Plant-based butter in a large bowl, pour in the Alpro Soya drink , stir in the salt and ground almonds. ⁠
  • Sieve the self-raising flour and bicarb of soda and keep to one side. Finely chop the herbs and dice the leftover roasted veggies. ⁠
  • Add all the dry ingredients, herbs, veggies and mashed potato to the wet ones in the bowl and mix together well. Add the cranberry compote, and using a wooden spoon, fold it gently into the batter. Season with a twist of salt and pepper.⁠
  • Spoon the mixture into your muffin tin – this recipe should make 12 yummy muffins. Bake for 20-30 minutes or until a toothpick comes out clean. Cool on a rack, then tuck in and enjoy all those Christmassy flavours all over again! ⁠
