Yield: 4 servings
Ingredients:
- 12 oz rice noodles
- 5 cups water
- 1/2 cup peanut butter
- 1/2 cup water
- 1 tablespoon tamari
- 2 tablespoons rice vinegar
- 1 tablespoon rice syrup (or other sweetener)
- 2-3 cloves garlic, minced
- 1 inch piece of ginger, minced
- pinch of cayenne pepper (or more to taste)
Directions:
- Bring the 5 cups of water to a rolling boil. Add the rice noodles.
- Turn heat off and stir rice noodles. Let them sit in the water for 7 minutes, or until soft; drain.
- To make peanut sauce: Bring water and peanut butter to a boil. Whisk to combine.
- Add rest of ingredients (except the noodles) to the sauce and whisk to combine. Season to your taste.
Note:
You can make the peanut sauce anytime and reheat just before serving. If it thickens, add additional warm water to it. The rice noodles should be made just before eating. Or you can make them in advance and add a little oil to them to prevent them from sticking together.
