Sautéed Portobello Mushrooms with Greens and Smoked Tofu

Yield: 4 servings

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, sliced thickly
  • 2 portobello mushrooms, sliced thickly
  • 1 package of tofu, sliced thickly
  • 1 bunch kale, chopped into small pieces

Directions:

  1. Heat olive oil and sauté onions and mushrooms until soft.
  2. Add smoked tofu and cook 2 minutes.
  3. Right before serving, add chopped kale and cover, steaming for 2 minutes until bright green and wilted.

Variations:

Substitute different types of dark leafy greens and/or mushroom varieties.

Add freshly ground pepper and fresh or dried sage for flavor.
