Couscous Salad

Ingredients:

  • Ingredients
  • 1/2 cup cooked couscous
  • 2 cucumbers
  • Diced 6 cherry tomatoes
  • Diced 1 carrot
  • Grated 1/4 cup walnut
  • Chopped 1 teaspoon mint
  • Fresh or dry (chopped) 1 teaspoon oregano
  • Dry 1/4 cup raisins (marinated in the dressing to soften)
  • Dressing
  • 1 tablespoon lemon juice
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard Salt and black pepper
  • Optional Feta cheese cubes Or Shrimp

Instructions:

  • Bring a saucepan of salted water to a boil
  • Add the boiling water to the couscous and set it aside
  • In another bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper
  • Add the raisins and set aside.
  • Add the drained and cooled couscous to the dressing and mix.
  • Add in the cucumber, tomato, herbs, walnuts and raisins.
