Ingredients:

- 1/2 cup cooked couscous
- 2 cucumbers
- Diced 6 cherry tomatoes
- Diced 1 carrot
- Grated 1/4 cup walnut
- Chopped 1 teaspoon mint
- Fresh or dry (chopped) 1 teaspoon oregano
- Dry 1/4 cup raisins (marinated in the dressing to soften)
- Dressing
- 1 tablespoon lemon juice
- 1 teaspoon finely grated lemon zest
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard Salt and black pepper
- Optional Feta cheese cubes Or Shrimp
Instructions:
- Bring a saucepan of salted water to a boil
- Add the boiling water to the couscous and set it aside
- In another bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper
- Add the raisins and set aside.
- Add the drained and cooled couscous to the dressing and mix.
- Add in the cucumber, tomato, herbs, walnuts and raisins.
