Veggie chili tortillas

Number of Servings: 4

Ingredients:

  • 1 tbsp vegetable oil
  • 1 medium onion (chopped)
  • 2 carrots (chopped)
  • 1 red pepper
  • 1/4 cup mushroom
  • 4 tomatoes (chopped)
  • 400 g beans
  • Corn tortilla bread
  • 1 tbsp taco powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tbsp soya sauce

Instructions:

  • Heat the oil in a large skillet
  • Sauté the mushrooms and onion until tender
  • Add the carrots, mushroom, red pepper
  • Cook for 2-3 minutes stirring frequently
  • Add the tomatoes and stir to combine
  • Add the beans, soya sauce and all the seasoning
  • Cover the skillet, reduce heat and let simmer for 20 minutes
  • To assemble the tacos, just grab a corn tortilla and add 3 tbsp of the mix
  • Make your tacos as spicy as you want
  • You can share it with mashed avocado or some guacamole instead
