Ingredients:
- 1 tbsp vegetable oil
- 1 medium onion (chopped)
- 2 carrots (chopped)
- 1 red pepper
- 1/4 cup mushroom
- 4 tomatoes (chopped)
- 400 g beans
- Corn tortilla bread
- 1 tbsp taco powder
- 1 tbsp cumin
- 1 tsp salt
- 1 tbsp soya sauce
Instructions:
- Heat the oil in a large skillet
- Sauté the mushrooms and onion until tender
- Add the carrots, mushroom, red pepper
- Cook for 2-3 minutes stirring frequently
- Add the tomatoes and stir to combine
- Add the beans, soya sauce and all the seasoning
- Cover the skillet, reduce heat and let simmer for 20 minutes
- To assemble the tacos, just grab a corn tortilla and add 3 tbsp of the mix
- Make your tacos as spicy as you want
- You can share it with mashed avocado or some guacamole instead
