Ingredients:
- 2 bunches arugula, washed and dried
- 1 avocado, sliced
- 2 tablespoons roasted pumpkin seeds/pepitas (shelled)
Dressing Ingredients:
- 2 tablespoons fresh lemon juice
- 1 clove garlic, finely minced
- 4 to five tablespoons extra-virgin olive oil
- sea salt and freshly ground pepper to taste
Directions:
- Combine lemon juice and garlic in a small bowl.
- Slowly whisk in olive oil until creamy.
- Season with salt and pepper.
- Place arugula in a large salad bowl.
- Add ¾ of the dressing and mix well.
- Add avocado slices and pepitas.
- Drizzle remaining dressing on top and toss slightly and gently.
